Caviar is more than an Instagram flex. It reigns as the pricey yet elegant fixture in any luxury dining experience, with a history that goes far beyond the mother-of-pearl spoons and caviar bumps of late. This tiny accoutrement can cost thousands of dollars per pound and hail from countries across Europe and Asia, and even in the United States. Made from separated and salted fish eggs, the varieties of caviar all stem from the sturgeon fish, while those household names — Kaluga, Ossetra, and Beluga, to name a few — stem from the types of sturgeons themselves.
