LAS VEGAS (KLAS) — The San Marzano tomatoes, buffalo ricotta, and smoked provola are a few of the many reasons Las Vegas pizza lovers are chasing an exotic food truck, but the owner is announcing the hungry pursuits may be satisfied with a dining announcement.
The Signora Pizza food truck was initially designed and manufactured in an Italian garage before being shipped to America—a slice of an immigrant story.
“We always thought to come to [the] U.S.,” Floriana Pastore, the pizza world champion and Signora Pizza owner, said. “I had always restaurant in pizzeria in Italy, but our dream was to go out, and we thought to open a pizzeria in U.S.”
Pastore, a native of Salerno near Naples, moved to Veneto in northern Italy with her daughter to grow her skill set, and despite difficult times, managed to gain enough success to open a business and later come to Las Vegas—where she had some family.
“We love Las Vegas,” she said. “I like the entertainment and everything, and the pizza community here is amazing.”
Through the obstacles of 2020, Signora Pizza was able to find success in Las Vegas and spur an online following, meeting them from the Summerlin RC Willey parking lot to Khoury’s Fine Wine & Spirits in Henderson.
“It’s a lot of work,” Pastore said. “Because during the week, we take one day off, and during the week, we prep and plus, we have a private event, so we work all week.”
The demand from customers led to their announcement of a physical pizza location, the Signora Pizza Lab, which will cater to diners and help the cooks explore more experimental pizza options, according to Pastore.
“I think it’s time because people really want us every day,” she said. “The truck sometimes, especially when we get super busy, you have to wait because sometimes we have 200 people [in line].”
The Signora Pizza Lab on N. Rainbow Boulevard and W. Washington Avenue is expected to open this summer.
