The Udon Era at Spring Oaks Shopping Center
Headline: Trays, Tempura, and the $40,000 Noodle Machine

For five years, the anchor corner of the Spring Oaks Shopping Center at Spring Mountain and Decatur was defined by a very specific sound: the rhythmic hum of a Yamato udon machine.

When Cafe Sanuki arrived in late 2017, it brought a slice of Kagawa Prefecture to the district. The restaurant was a high-tech “passion project” for owner Henry Fan, who sought to replicate the high-volume, “fast-casual” udon houses he had admired in Hawaii and Japan. To achieve the perfect “mochi-mochi” (chewy) texture, Fan famously invested roughly $40,000 in specialized equipment, including a 40-gallon boiler and a Japanese-imported Yamato machine capable of applying precise pressure that manual kneading simply couldn’t match.

The dining experience was pure culinary choreography. Guests would grab a plastic tray and “run the gauntlet,” watching their noodles receive a precision ice bath before selecting from a golden array of self-serve tempura, musubi, and inari. From the creamy Carbonara Udon to the classic Niku Udon, it offered a world-class meal with cafeteria-style efficiency.

Cafe Sanuki quietly shuttered its doors in September 2022, marking the end of the self-serve Japanese era for Suite G. By early 2023, the space began its transformation into what we know today as Special Noodle (Si Jie). The bright, open floor plan was replaced with moody lighting, dark wood accents, and the signature built-in aquariums that now serve as booth dividers.

While the steam from the Yamato machine has long since cleared, the legacy of artisanal noodle-making continues in the space—shifting from the bouncy udon of Japan to the delicate dumplings and hand-pulled noodles of China.


Chinatown Gripes

The Chinatown Gripes: Same Song, Different Verse

It’s another week on Spring Mountain Road, and while the scenery changes, the headaches remain remarkably consistent. Here’s the latest on the hurdles making our daily commute a test of patience:

The Snail-Paced Speed Limit Reduction
We’ve been told a lower speed limit is finally on the horizon to make our streets safer for pedestrians. While the bureaucratic wheels are turning, they aren’t turning nearly as fast as the traffic currently zooming past our storefronts. It’s coming “soon,” but in the world of public safety, “soon” was yesterday.

The Pothole Purgatory
The city has technically started addressing the craters that define our North-South arteries, but the repairs are a classic case of “too little, too late.” Navigating the district shouldn’t feel like an off-road excursion. We need smooth asphalt now, not after another season of suspension-ruining dips.

The Bus Stop Bottleneck
Our current bus stop placements continue to be a masterclass in poor planning, often choking traffic at the busiest intersections. While we’re rolling out the red carpet for the Boring Company’s Vegas Loop to finally provide a modern transit solution, we still have to deal with the current gridlock in the meantime.

The Left-Turn Lottery
Trying to make a left turn out of a plaza or strip mall remains the most dangerous game in town. Between the blind spots and the aggressive flow of traffic, it’s a maneuver that requires more luck than skill.

The “Reverse Logic” Traffic Lights
We are convinced that the traffic light timers in this district are the worst in existence. In fact, we’re certain that if the city simply reversed the current timing patterns, traffic would flow infinitely better. As it stands, the lights seem perfectly synced to ensure you hit every single red on your way through the corridor.
