An upscale Mexican restaurant near RPM Italian in the Forum Shops at Caesars Palace is closing next month. Sol Mexican Cocina opened in November of 2022 with a Baja-style design and an opening attended by Bruno Mars. The restaurant will close in September.
Sol Mexican Cocina will close on September 30, according to the Las Vegas Review-Journal, reporting that a WARN notice was provided to the state of Nevada, indicating planned large-scale layoffs. The closure will mean 70 positions will be eliminated.
The 11,000-square-foot restaurant is breezy with cool tan sheets suspended from the ceiling and an artsy centerpiece of a sculpture designed from tree boughs and fabric. While the design is eye-catching, it is also inconvenient to get to — located nearly as far away from the entrance to the mall as you can get when entering from the casino. Reaching the restaurant means circling around a famously impeded pathway to reach the escalator that takes visitors down to the street level where Sol is located.
The menu spans more traditional Mexican favorites to modern takes with Vampiro chicken tacos, a canarditas duck dish that combines deep-fried duck leg confit with tequila-laced blackberry serrano salsa, and an appetizer of grilled street corn presented tableside. Bruno Mars’s SelvaRey line of rum breaks up a tequila and mezcal-dominated cocktail menu with a Cold Bruno espresso martini that Mars helped develop. Other drinks are made with Cardi B’s Whipshots booze-infused whipped cream. A cocktail called the Chainsmoker uses the DJ duo’s tequila brand to create a cocktail that overflows with smoke.
Southern California-based Xperience Restaurant Group has not responded to a request for comment on the closing.
